Hello hello!
Today was a crazy day…no jury duty today, but I have to call in tomorrow morning to see if I have to go in the afternoon. One of my coworkers said that usually isn’t a good sign…if you have to call in the morning, you usually have to go in the afternoon. So I tried to get as much done at the office as I could just in case!
For a quick breakfast before I went to work, I had some cereal with fresh strawberries…1/2 cup TJ’s High Fiber Cereal, 1/2 cup Honey Bunches of Oats, 1-1/2 cups fresh strawberries, 1/2 cup 2% milk and 1/2 cup almond milk.
By the time I left for lunch, I was starving…and craving junky chinese food! I needed to run some errands for the office, so I took a snack to go in the car hoping to curb my appetite until I got back home.
I had a hardboiled egg, some reduced fat Triscuit crackers and some light salami.
It was a good snack, but I was still hungry for lunch! I talked myself out of the chinese food and got a salad and some sushi from Whole Foods instead. The salad was about 1 1/2 cups of romaine, 1/4 cup each of carrots and kidney beans, a tiny scoop of red quinoa and about 1/2 cup of fresh mushrooms. With my salmon and avocado roll on the side, it was a satisfying lunch.
Especially when I topped it off with a couple of spoonfuls of mint chip ice cream…I rarely eat ice cream during the day but I had a sweet tooth and the slow-churned light ice cream was the perfect quench!
This evening I went to the gym for the first time in a couple of weeks and rode 11 miles on the stationary bike. It felt great and I’m glad I made myself go! It also feels good to check off one piece of my Weekly Goals, which I just outlined earlier today!
After the gym I headed over to Mom & Dad’s for pollo asada tacos and The Bachelorette! I had two tacos with chicken, a little bit of shredded cheese, lettuce and salsa on corn tortillas, and a small scoop—about 1/2 cup—of refried beans on the side. It was one of those times when I was too hungry and too lazy to go get the camera, so sadly there is no picture. You’ll just have to trust me in that they looked good and tasted better!
Pretty good day for a Monday…a pound lost at yesterday’s weigh in, a workout and avoiding the junk lunch…I’ll call that a win!
