So my Monday didn’t start out so great, nutrition-wise. I ran out to the store before work to pick up a couple of things and I brought home breakfast.
And this:
What was I thinking? What have I been thinking for the last, oh I don’t know, 3 months or so? So I came home and posted about a much needed pushing of the reset button. (Breakfast total: 610 calories)
And then I moved on with my day. Of course, those empty carbs did not keep me full so I had a mid-morning snack was a honeycrisp apple and 1 ounce of 2% cheddar cheese. (171 calories)
That barely held me over, and by lunch I was starving. I came home and made a healthy stir fry…1-1/2 cups each of zucchini and carrot, 2 cups of broccoli, 3/4 cup each of mushrooms and pineapple chunks. I topped the veggies with 2 tbsp of Trader Joe’s Island Soyaki (one of my favorite stir fry sauces) plus 2 scrambled eggs and 1/4 cup of roasted almonds for a punch of protein. I didn’t think I would be able to finish this…but I did and I was still craving a little carbohydrate. (Imagine that.)
For my carb, I had a half of a small baked yam, about 1/2 cup, with a tiny sliver of butter, about 1/3 tbsp. I really enjoyed snapping pictures as the butter melted into a little stream with salt and pepper floating in it.
I had 1 square of an Attune probiotic bar on my way back to the office for my chocolate fix, and I was definitely filled up for the rest of the afternoon! (Lunch totaled 767 calories)
For dinner I made myself a salad–about 4 cups of romaine lettuce, a chopped honeycrisp apple, about 3/4 cup of mushrooms, and a cup of homemade croutons. I had 1-1/2 tbsp of ranch dressing on the side, with a bowl of Mom’s vegetable soup–about 2 cups worth. (535 calories)
I’m amazed with the volume of food I consumed today…especially at lunch! I’m back in hunger mode…I’m going to have to concentrate on having more salads and soups that I can eat in a little more volume until the hunger hormones calm down. That’s what happens when you’re coming down off of a sugar high, ugh!
In all, I would have done better if I hadn’t had that donut and chocolate milk for breakfast before having a meltdown and posting on the blog about pushing the reset button! You have to start somewhere I guess.

Yanno, I thought that was THREE donuts, the filled kind, so I’m proud that’s just one. LOL. I am a sucker for chocolate milk!!! That yam looks so good, yum!
