Day two of the Food Stamp Challenge!
For breakfast, I had the same thing as yesterday…1 cup of Erewhon raisin bran cereal with 1 cup of seedless red grapes and 1 cup of fat free milk. (322 calories)
For a late morning snack, I had an apple, about 1/2 cup of carrot sticks, about 2-1/2 tbsp of Sabra roasted garlic hummus, and a hardboiled egg. (318 calories)
I’ve missed my little buffet snack plates! I’m glad I brought this back.
Lunch was a sort of creative salad…about 5 cups of romaine, 1 cup of slow cooker black beans, 1/2 cup of cooked green lentils, 1/4 cup of avocado and a hardboiled egg, sliced up for an extra punch of protein.
Oh, and then I doused it in 1/4 of peach-pineapple salsa. (Total meal 459 calories)
I went to Mom & Dad’s for dinner, but in the spirit of the challenge I took my own food with me. They were having a delicious looking Greek chicken sort of stew over basmati rice and garlic bread.
I caramelized 1/2 cup of yellow onion in about 1/2 tbsp of butter, then added about 4 cups of mustard greens and wilted those down. I took those off of the stove and then sauteed about 1 cup of zucchini in another 1/2 tbsp of butter. I served myself the veggies alongside 3 ounces of grilled chicken breast. (Total 339 calories)
Finally, I did sneak just one slice of Dad’s garlic bread as a dessert of sorts. (Estimated at 170 calories)
