Daily Eats—Tuesday, October 4

Hey friends! Here is a recap of my meals for today, Tuesday October 4th.

Breakfast was one cup of Organic applesauce with two TJ’s multi-grain waffles and about 3 tbsp of homemade peach preserves. (Homemade by Famer John, not me. Don’t be ridiculous.)

Late morning snack was 1/4 cup of low-salt nuts…

…and 1-1/2 ounces of 2% cheddar cheese with about 4 reduced fat Triscuit crackers…

…and half of a chocolate chip cookie.

Lunch was a spinach salad (about 2 cups of organic baby spinach and a bit of romaine lettuce) with about 1/4 cup each of shredded carrot, sliced mushrooms, red kidney beans and quinoa. I added a few croutons and then dressed it with 3/4 tbsp of olive oil and 1 tbsp of TJ’s orange muscat vinegar.

Dinner was 3/4 cup of fat free refried beans, split between two small whole wheat tortillas with 1 tbsp of peach-pineapple salsa on each one and about 1/3 cup of avocado.
