Day three of the Food Stamp Challenge is complete!
I was feeling rather sorry for myself this morning…stuck eating the same cereal for breakfast and the same beans and greens for lunch.
Until…
…until I realized that I could make eggs-in-a-hole for breakfast!
The Pioneer Woman was right—the best part about eggs-in-a-hole is the little buttery toasty circles of bread! Alongside a yummy Honeycrisp apple, this was a delicious breakfast.
A mug of chocolate milk finished me off. (breakfast totals 479 calories)
For a late morning snack, I had a hardboiled egg from Farmer John’s chickens…
…and a little mug of slow cooker black beans.
Pesky headphone cord…I should stop taking photos with my iPod on. (snack totals 128 calories)
For lunch…well, lunch was, as you can see, not a part of the Food Stamp Challenge. My friend Annie had asked me to lunch, her treat. I had given her my old cell phone when I got a new one and I wouldn’t let her give me any money for it but I told her she could take me out to lunch.
People on food stamps probably have friends that take them to lunch once in a while…right?
Super yummy eggplant and veggies with chicken, salad and a little white rice on the side.
I couldn’t help but eat the whole plate, it was that delicious! (Approximately 547 calories)
Because I had such a large lunch, I went for a really light dinner. 1-1/2 cups of Erewhon raisin bran cereal, 3/4 cup of grapes and 1-1/2 cups of fat free milk. (437 calories)
