Hey everyone!

Well as I mentioned in my last post, our latest Fitbloggin’ Local meetup was this past Saturday…me and my Tupperware full of caramelized onions headed down the highway to Napa to meet up with Tracey and the girls for a nice walk and a make-your-own-pizza lunch.

I was an embarrassing 30 minutes late…darn one-lane wine country roads full of tractors and grape trucks this time of year! I was already running late when I left home but I thought I would just be 10 or 15 minutes late. That stretched out to 30 minutes with all of the slow moving traffic…luckily Tracey got my tweet and the girls all waited for me.

We went on a nice walk along the Napa River marshland and then headed back to Tracey’s house for lunch.

Here we all are, post-walk and pre-lunch…let me re-introduce you to some of my favorite Bay Area bloggers:

Then it was time to make pizzas! Here was our little topping bar…

(PS. See my ONIONS….?!? They were a hit! Either that or these girls are just way too nice to me! Which they’ll take back when they see how much butter was in those…whoops, haha!)

Tracey joked that I had to knead it so many times it was probably already cooked. And she was right. I just do not have the pizza dough touch.

I will give myself some credit for pizza topping skillz…I used some pizza sauce, a little sprinkle of mozzarella, a layer of spinach leaves, some zucchini, mushrooms, olives and a healthy layer of caramelized onions! (Duh.)

And here is my salad…I’d never tried French Fried onions on my salad before but they are yummy!

I better not buy any. Because I’ll probably eat the whole container. Like, in one sitting.

Mmmmm! I had heard that you can make cupcakes using only a boxed cake mix and a can of diet soda (or club soda if you aren’t into artificial sweeteners)…I didn’t think they would be any good but these were actually really yummy!

All in all, it was a great meetup as usual. I can’t wait to see some of these girls (and other great bloggers) at the Foodbuzz Festival this weekend! Only a few more days and it will be here!

Looks like SUCH a fun time! :)
I’ve never tried the “2-point soda cupcakes,” but they sure do sound delish! I love the idea of a pizza bar with healthy toppings. Pizza is definitely a weakness of mine. What a great way to make it good for you.

Never heard of the two point cupcake other than angelfood cupcakes. Are you going to stay in SF for the weekend or travel back and forth. I am going alone, and my first time too. I am hoping to hang with a few girls I already know.

Hey Marlene! Apparently the 2-point cupcake works with any boxed cake mix. But Tracey and Danica were also telling me about all of the tricks you can use with an angel food cake mix also. I’m definitely going to try that soon.

I am staying in the city at a non-blogging friends house, Friday and Saturday night. Definitely keep an eye out for me or shoot me a tweet and we’ll hook up! Looking forward to seeing you. :)

Great recap & thanks for posting the recipe for the onions. I also need to try adding spinach to my pizza. That looked so yummy!
