Mini English Muffin Pizzas

Yesterday I went home for lunch and stood in front of the fridge pondering.

For a while.

What I really wanted was to walk down the street and get a burrito.

But I knew I had some stuff in the fridge and I should be good and eat at home. So I pulled out a few things…

And decided to make some english muffin pizzas!

I smeared four english muffin halves with a tablespoon of tomato paste each.

I prefer to use tomato paste on my mini pizzas…I like that it’s less watery than pasta or pizza sauce and it’s got a stronger flavor. Too strong for some maybe, but I like it.

Then I added some spinach leaves…maybe about a cup, cup and a half total between all four mini pizzas.

I added some slices of the ginormous mushrooms…

…and some zucchini rounds.

The cheese was an afterthought so it went on top. Plus, hopefully it would help glue all of the veggies together!

After about 8 minutes in the oven at 350*F, I had a delicious looking lunch!

Yum! Just as satisfying as the burrito I wanted, plus they’re quick, easy, inexpensive and healthy!

I highly recommend them!

Wow, those look healthy and delicious. I wish I had it in me to make healthy food when I was craving something bad. You dear, have amazing self control. :)
